Teriyaki Poke Bowl

Oh boy, this may be my favorite dinner lately and the best part is, you can make them with whatever you want or have in your fridge, as well as change up the protein whenever you want. Pick out your favorite veggies, grab some teriyaki sauce and pick your protein and BOOM, Poke Bowl done!

Let’s create some yummy bowls shall we?

Here’s what you’ll need…

The best Proteins to use: Chicken, Steak, Salmon & Shrimp

2 cups of jasmine rice-Serves 4 people

Panda Express’s Mandrin Teriyaki Sauce

2 avocados sliced and cubed

1 cucumber sliced and cubed.

1 bag of steamed in bagged carrots (Local grocery isle by regular carrots, or steam them yourself)

1 head of broccoli

1 bag of poodles edamame (My fav is at Trader Joes)

1/2 small red onion minced

1/2 a cup of green onion for garnish

Rice Seasoning (Asian Isle at local grocery store)

First, slice and prep all veggies and cook your rice.

Next, cook your protein in a pan with a little olive oil and sprinkle with garlic salt with pepper.

Once cooked, slice for bowls.

While your protein cooks, cook and prep your veggies. Microwave or steam your bagged carrots and edamame. Take a small pan and pour some olive oil in it and cook your broccoli for about 5-6 minutes until tender. Sprinkle with a little garlic salt. I like mine a little browned.

You can slice and add your avocado just as is, cubed. Or I like to make this Again Unagi dip a friend showed me and top it with that.

Unagi Dip is sliced and cubed avocado, minced red onion, unagi sushi sauce and rice seasoning. Add cucumber if you would like. Top on your poke bowl or eat with wonton chips of tortilla chips.

Now it’s time to assemble your bowls. Place a big scoop of rice in a bowl. Drizzle a little teriyaki sauce over your rice. Next add your veggies to the side, saving the middle for your protein. Top your protein with more sauce to your liking. Add sliced avocados on top and sprinkle with the rice seasoning. Yummy!

NOW EAT and enjoy!
