So if you cant tell I love Mexican food…. A LOT! And green chili is good on all of it. Like literally… ALL OF IT. It is also good for a cold day like we had today in Colorado! All that snow that’s so cold means that we deserve some HOT deliciousness for our mouths! ha ha. Here is my pork green chili recipe. You can do it without the meat to, to make it vegetarian. Or make it gluten free by using Corn Starch instead of flour.

Here’s what you’ll need…
1-1/2 pound of pork- cut into cubes
1-small onion-diced
2- cans of rotel tomatoes with green chilies
1- 32 oz package of frozen green chili- or 6-8 cans of green chilies
6- cups of water
2-3- tbs spoon of garlic salt
1- tbs of salt
2-tbs of pepper
1/2-1 jalapeño -(depending on how hot you like it)
5 tbs of flour- (this helps thicken it)


First, you will need to chop up the onions, jalapeno, and pork. Then add the pork, salt, pepper, garlic salt and cook till browned.
Next, put the onion and jalapeño with 1-2 tbs of water in the pan. Cook on medium heat till onions are translucent.
Now add 3 tablespoons of flour and mix in to coat the juices of the meat and onions. It will look like a paste on top of the meat.
Now add two cups of water and stir, then add your cans of tomatoes. Stir together and let thicken for 3-5 minutes. Then add in 2 cups of water.
Last but not least… add the good stuff. THE GREEN CHILIS!!! Also add in the last two cups of water with another 2 tbs of flour(Mix before you pour in) YUMMMM. Mix and let cook for 15-20 minutes on low.
(TIP-If your chili is super watery, add more flour in with one of the cups of water as you add it to thicken it)
THEN YOU ARE FINISHED! Pour over burritos or place in a bowl and eat with tortillas.
