
Anyone else obsessed with a Costco $4.99 Rotisserie Chicken like I am? They are so great for some many things but my favorite is when I make Chicken noodle soup from it. The flavor is awesome and it has the perfect amount of chicken for a hardy soup!
Chicken noodle soup is also my favorite thing to make as the weather turns cold…. or when I have a sick kiddo. Nothing is better then having a yummy bowl of homemade soup when your sick. Am I right? Chicken noodle soup is just a total comfort food!
Heres what you’ll need
- 1 Rotisserie chicken
- 2 cups Carrots
- 2 cups Celery
- 1 Onion
- 1 tsp Onion powder
- 1 tsp Oregano
- 1 tsp Parsley
- 15 oz Chicken stock, canned
- 8 oz enriched egg noodles- Mrs. Weiss KLUSKI brand is my favorite
- 1 pinch Cayenne
- 1 Salt
- 1 tbsp Olive oil
- 5 cups Water
First place your rotisserie chicken in a pot with about 5-6 cups of water and bring to a boil, then turn heat way down, cover and let simmer for an hour (If you don’t want to make your own stock, feel free to skip this step and the next one, and just remove water, and use more canned chicken stock)

Then remove the bones/strain the broth, so all you have is a really tasty stock and remove chicken from pones and place in a separate bowl.
Next, get a new pot, and put olive oil in the bottom, turn onto medium heat and saute your onions, carrots, and celery for a few minutes, until onions are translucent for about 5-6 minutes. Then stir in your parsley, oregano, onion powder, and cayenne.
Then add in your homemade stock and canned stock. Bring the pot to a boil over medium heat. Shred the rotisserie chicken meat you removed from the bones, and add it to your soup pot.

Add in your egg noodles and cook for about 8-10 minutes. Salt to your taste preference.
