Almost Famous Spinach Dip

Raise your hand if your addicted to ordering Spinach Dip where ever you go???? MEEE! Just call be BASIC! But, Im going to be honest… sometimes I do not love it! Why, because I really think it depends on these cheese, the amount Spinach and if it has artichokes in it or not. So I made my own and I call it- Almost Famous Spinach Dip!

Here’s what you’ll need…

  • Kosher Salt to taste
  • 2 -10 ounce bags of spinach, stems removed.
  • 1 TBS of unsalted butter
  • 2 1/2 TBS of minced onion
  • 1 garlic clove- Minced
  • 2 Tsps of all purpose flour
  • 1 1/4 cup of whole milk- I use 2%
  • 1/2 tsp od fresh lemon juice
  • 1 tsp of Worcestershire sauce
  • 1 1/4 cup of Parmesan cheese
  • 1/4 cup of sour cream
  • 1 cup of white sharp cheddar
  • 1/2 cup of artichoke hearts

Serve with bread and tortilla chips

Thaw out your spinach if frozen and drain all water out. Fresh spinach put in pan and bring to a boil with water and cook until bright green. Rinse and drain all the extra water!

Melt the butter in a large saucepan on medium heat. Add your minced onion, garlic and a 1/2 tsp of salt. Cook until onion is soft about 3 minutes.

Add the flour and cook stirring until lightly toasted.
Whisk in the milk and cook. Whisking until thickened. Remove from heat.

Add Lemon juice, Worcestershire sauce, Parmesan and sour cream. 

Return the pot to medium heat. Add the spinach and the cheddar until cheese is melted. Stir continuously. Add in your artichokes last if wanted.

Last, you can either serve right out of the pan, or bake it and add extra cheese on top and bake until melted. About 15 minutes at 350 Degrees. Do what ever you prefer!

Serve with tortilla chips, Veggies and bread. I also like to get a bread bowl from the local bakery and place it in there!
